Mint Chocolate Chip Ice Cream

Mint Chocolate Chip Ice Cream is by far our favorite ice cream! At $5 per half gallon...that's a little steep for our wallet considering how much we enjoy ice cream! At least now, we know what the ingredients are, it's not nearly as expensive, and boy is it yummy!
Last Mother's Day the boys got me this ice cream maker...sadly, I didn't use it all that much. However, my wanna be chef son decided he'd play around with some recipes! Boy are we glad he did, because now we can have Mint Chocolate Chip Ice Cream on demand...WOOHOO!

Here's what you'll need:
-a 2 quart ice cream maker
-4 cups of milk
-1 cup sugar (we use Wholesome Organic evaporated cane juice)
-1/2 tsp sea salt
-1 tsp pure vanilla extract
-1 tsp peppermint extract
-1 cup mini chocolate chips or Andes mints


Step 1: In a bowl/measuring cup dissolve the sugar and salt in the milk.



Step 2: After sugar and salt are dissolved add the vanilla and peppermint and mix well.



Step 3: Pour mixture into the ice cream bowl and churn for 40 minutes.



Step 4: 5 minutes before churning is done add chips...MMMM...almost done! You can enjoy it as soft serve or put in the freezer for later! It has the consistency of snow cream...light and creamy!
