Apple Jelly

Last week I found a recipe and did a post on some peach jelly I made using peach juice that I made by boiling the skins and pits. I'm sure that was a run-on!Anyway, I fell in love with the clarity of the peach jelly and wanted to try making apple. My girlfriend picked a bunch of apples and pears at another friends house and brought a big bag of each to me. So I put the apples through my apple-corer-slicer-peeler, put the peels and cores in a pot, and saved my apple slices for another dish.


Here are my cores and peels at a full boil. I boiled them hard like this for about 15 minutes.


After boiling, I dumped everything in the pot into a strainer to capture my lovely apple juice!


Here is my apple juice! Like the peach juice, it's cloudy!


With my juice, I had to make some jelly! It's not as clear as the peach was, but it's still pretty and OH SO YUMMY! Apple Jelly was my favorite kind of jelly when I was a girl. So, this was a real treat that brought back some memories! I'll have to try pink apples next time, so my juice will be a pretty rose color!

To make the jelly, you need...
4 cups of juice
1 box of Sure Jell*
2 tsp. lemon juice
5 cups of sugar
Bring the first 3 ingredients to a rolling boil, add sugar, when it comes back to a full boil, boil hard 1 minute. Ladle jelly into hot jars and process for 10 minutes. Next I'll be making Pear jelly! MMMMM!
